I eat a plant based diet made up primarily of grains, beans, nuts, seeds fruits, and vegetables. When I am eating my healthiest I avoid overly processed foods that contain refined carbs, high amounts of sugar, sodium, and trans fat. That isn’t to say that I eat my healthiest most days. I love my pastas, breads, chips and pastries. I try to strike a balance and eat these in moderation because I care about my health, but I don’t deprive myself of the foods I enjoy either.
I hope to inspire others to switch to a plant based diet and to stop eating animals and animal derivatives, even if only for a few days per week. Doing so will have a positive impact, not only on the lives of animals but on the planet as well.
I almost always eat organic. I grow some of my own fruits and vegetables, but my small garden does not supply me all year with the variation of foods that I enjoy. However, I do feel good knowing that I can grow enough to sustain myself and my family through times of hardship. When I am traveling it can become more difficult to find organic foods. I just do the best I can.

I’ve eaten a plant-based diet since becoming a vegan in 1990. Today veganism has moved into the mainstream because many people do want a better world, and there is a growing willingness to make choices that benefit the lives of others and the planet. They are also realizing how delicious plant based food can be. There are so many more resources available now to anyone interested in learning about plant based/vegan living. It pleases me to see that so many people are now making conscious eating decisions that are morally consistent with the values they advocate in other areas of their lives.
